Last night I cooked really simple dishes for my family, one soup and one dish only. Guess what they were delicious as my hubby said, especially the soup and my darling paopei also liked it so much so finished her bowl of soup not as normally she will not finish up all.
What did I cook was creamy corn soup and stir fried bean sprout with tofu, that's all...but I forgot to take photo of them otherwise I can show them off ha ha ... hopefully I can remember to take some photos with my yummy dishes next time.
My hubby ate 2 rounds or had his 2nd plate of rice which he will do that only if I cook curry haha...I am happy and very proud of myself as they like my cooking.
I said to myself ciayo...ciayo...well done.
Creamy Corn Soup
Ingredients:
1 can cream corn
1 egg, beaten, add pinch of salt and pepper
2 cups water, bring to boil
2 tbsp corn flour, mix with 2 tbsp water
1 cube Maggi vegetable stock
1 pinch pepper
1 tsp salt
Put cream corn and Maggi vegetable stock into boil water, let it boil again for 5 minutes, add in beaten egg while still stirring for a minute, add mix corn flour (when adding corn flour, remember to keep stirring to avoid the flour from getting hard and can dissolve better). Lastly, add salt and pepper to your preference taste.
PS: Can also add in chopped vegetarian ham or vegetarian shredded chicken nuggets into the soup.
Bean Sprout Stir Fried Tofu
1 cup bean sprout
1 tofu cut inti small rectangles
1 cup shredded carrot
1 cup french beans, cut into long strip
1 tsp salt
Pepper to taste
1 tsp sugar (to replace MSG)
Few drops light soy sauce
First stir fried tofu till golden, add in carrot and french bean, stir for 5 minutes then add in bean sprout, salt, pepper and sugar and few drops light soy sauce, stir for few minutes while bean sprout still look fresh and crispy.
Simple and colourful bean sprout stir fried tofu dish and creamy corn soup is ready to be served with rice.
